Ingredients
Scale
Wet Ingredients:
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
Dry Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Mix-Ins:
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped almonds (toasted for extra flavor)
- 1/2 cup semisweet or milk chocolate chips
Optional Toppings:
- Whole almonds
- Additional shredded coconut
- Melted chocolate drizzle
Instructions
- Prepare the Dough:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Combine Dry Ingredients:
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Add the Mix-Ins:
- Fold in the shredded coconut, chopped almonds, and chocolate chips, ensuring they are evenly distributed throughout the dough.
- Shape the Cookies:
- Scoop out 1-2 tablespoons of dough per cookie and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake:
- Bake in the preheated oven for 10–12 minutes or until the edges are golden brown but the centers are still soft.
- Cool and Decorate:
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. If desired, top with whole almonds, a drizzle of melted chocolate, or extra shredded coconut.
Notes
- Toast the almonds before adding them to the dough for a deeper, nuttier flavor.
- For softer cookies, don’t overbake them—remove them as soon as the edges start to turn golden.
- Store in an airtight container at room temperature for up to 5 days.
