Ingredients

Scale
  • 4 cups cooked chicken, shredded or diced
  • 8 cups cornbread, crumbled
  • 4 cups white bread, cubed
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cups chicken broth (plus extra if needed)
  • 2 large eggs, beaten
  • 1/2 cup unsalted butter, melted
  • 1 tbsp poultry seasoning
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • Salt and pepper, to taste
  • Optional: 1/2 cup fresh parsley, chopped

Instructions

  1. Prepare Ingredients: Preheat your oven to 350°F (175°C). Grease a large baking dish and set aside.
  2. Cook Aromatics: In a skillet, sauté celery and onion in butter over medium heat until softened (about 5-7 minutes).
  3. Mix Bread Base: In a large mixing bowl, combine cornbread crumbs and white bread cubes.
  4. Combine Ingredients: Add cooked chicken, sautéed vegetables, poultry seasoning, thyme, sage, and parsley to the bowl. Mix well.
  5. Add Liquids: In a separate bowl, whisk together chicken broth and beaten eggs. Pour over the bread mixture and gently toss until evenly moistened. Add additional broth if the mixture seems dry.
  6. Bake: Transfer the mixture to the prepared baking dish. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes or until the top is golden and crispy.
  7. Serve: Let the dressing rest for 10 minutes before serving. Garnish with extra parsley if desired.
