This homemade chicken bone broth is rich, nourishing, and packed with collagen and essential nutrients. It’s a perfect base for soups, stews, or enjoyed on its own for a comforting and healing drink. Slow-simmered to extract all the goodness from the bones, this broth is both flavorful and incredibly healthy.

- 2–3 lbs chicken bones (leftover roasted chicken carcass or raw bones)
- 10 cups water
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, smashed
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon black peppercorns
- 2 bay leaves
- 1 teaspoon turmeric (optional, for extra anti-inflammatory benefits)
- 1 small bunch fresh parsley (added at the end)
Instructions
- Prepare the Bones: If using raw bones, roast them at 400°F (200°C) for about 25 minutes to enhance flavor.
- Combine Ingredients: Place the bones in a large stockpot or slow cooker. Add water, vinegar, and all vegetables and spices except parsley.
- Simmer: Bring to a boil, then reduce heat to a low simmer. Skim off any foam that rises to the top.
- Slow Cook: Let simmer for at least 12-24 hours. If using an Instant Pot, cook on high pressure for 2-3 hours.
- Finish with Parsley: In the last 30 minutes, add fresh parsley for extra nutrients.
- Strain: Remove bones and vegetables. Strain the broth using a fine-mesh sieve.
- Store: Allow the broth to cool, then refrigerate for up to 5 days or freeze for up to 6 months.
Notes
- Adding apple cider vinegar helps extract minerals from the bones.
- For a richer broth, use a mix of chicken feet, wings, and carcass.
- If refrigerated, the broth may become gelatinous due to the collagen – this is a sign of high-quality bone broth!
- Feel free to add other seasonings like ginger or star anise for an extra depth of flavor.
