Ingredients
Scale
For the Baked Potatoes:
- 4 large russet potatoes
- 2 tbsp olive oil
- 1 tsp sea salt
For the Steak Bites:
- 1 lb sirloin steak (or ribeye), cut into bite-sized cubes
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- ½ tsp smoked paprika
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
Toppings:
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 4 slices crispy bacon, crumbled
- ¼ cup chopped green onions
- ½ tsp red pepper flakes (optional)
Instructions
1. Prepare and Bake the Potatoes:
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes clean and pat them dry.
- Use a fork to pierce the potatoes several times to allow steam to escape.
- Rub each potato with olive oil and sprinkle with sea salt for crispy skin.
- Place the potatoes directly on the oven rack and bake for 50-60 minutes or until the skin is crispy and a fork easily pierces through.
2. Cook the Steak Bites:
- While the potatoes are baking, cut the steak into bite-sized cubes.
- Season with salt, black pepper, garlic powder, and smoked paprika.
- Heat a large cast-iron skillet over medium-high heat and add 1 tbsp butter.
- Once the skillet is hot, add the steak bites in a single layer (work in batches if needed). Sear for 2-3 minutes per side until browned and crispy.
- Reduce heat to low, add the remaining 1 tbsp butter and minced garlic, stirring to coat the steak in garlic butter. Remove from heat.
3. Assemble the Loaded Potatoes:
- Remove the baked potatoes from the oven and let them cool slightly.
- Slice each potato open lengthwise and fluff the insides with a fork.
- Add a pat of butter inside each potato, then sprinkle with shredded cheddar cheese to melt.
- Pile the garlic butter steak bites on top of the potatoes.
- Drizzle with sour cream, then sprinkle with crispy bacon bits, chopped green onions, and red pepper flakes if using.
4. Serve and Enjoy!
Serve immediately while hot, with extra toppings on the side if desired.
Notes
- Steak choice: Ribeye or filet mignon will give the most tender bites, but sirloin is a great budget-friendly option.
- For extra crispy skin, place the baked potatoes under the broiler for 3-5 minutes before serving.
- Sauce option: Drizzle with ranch, garlic aioli, or a spicy chipotle sauce for extra flavor.
- Meal prep tip: Bake potatoes ahead of time and reheat before adding toppings.
