Description

These delightful Strawberry & Honey Madeleines are soft, airy, and infused with the natural sweetness of honey and fresh strawberries.   • ½ cup (113g) unsalted butter, melted and slightly cooled
  • 2 large eggs
  • ½ cup (100g) granulated sugar
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup (40g) finely diced fresh strawberries
  • Powdered sugar, for dusting (optional)

Instructions

  1. Prepare the Batter: In a mixing bowl, whisk the eggs and sugar until pale and fluffy. Add the honey and vanilla extract, and mix well.
  2. Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, and salt.
  3. Incorporate Ingredients: Gradually fold the dry ingredients into the wet mixture. Slowly drizzle in the melted butter while folding gently to maintain an airy texture.
  4. Add Strawberries: Carefully fold in the diced strawberries, ensuring even distribution without overmixing.
  5. Chill the Batter: Cover and refrigerate the batter for at least 1 hour (or overnight for better results).
  6. Preheat Oven: Set the oven to 375°F (190°C) and grease a madeleine pan with butter or nonstick spray.
  7. Bake: Spoon about a tablespoon of batter into each madeleine mold, filling about ¾ full. Bake for 10-12 minutes, or until the edges are golden and the tops spring back when touched.
  8. Cool and Serve: Let the madeleines cool in the pan for a few minutes before transferring them to a wire rack. Dust with powdered sugar if desired.

Notes

  • Chilling the batter helps develop the signature hump on the back of the madeleines.
  • Do not overmix the batter after adding the dry ingredients to keep the texture light.
  • Fresh strawberries can add moisture, so dice them finely to prevent soggy madeleines.
