Ingredients
Scale
- ½ cup (113g) unsalted butter, melted and slightly cooled
- 2 large eggs
- ½ cup (100g) granulated sugar
- 2 tbsp honey
- 1 tsp vanilla extract
- ¾ cup (95g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ¼ cup (40g) finely diced fresh strawberries
- Powdered sugar, for dusting (optional)
Instructions
- Prepare the Batter: In a mixing bowl, whisk the eggs and sugar until pale and fluffy. Add the honey and vanilla extract, and mix well.
- Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, and salt.
- Incorporate Ingredients: Gradually fold the dry ingredients into the wet mixture. Slowly drizzle in the melted butter while folding gently to maintain an airy texture.
- Add Strawberries: Carefully fold in the diced strawberries, ensuring even distribution without overmixing.
- Chill the Batter: Cover and refrigerate the batter for at least 1 hour (or overnight for better results).
- Preheat Oven: Set the oven to 375°F (190°C) and grease a madeleine pan with butter or nonstick spray.
- Bake: Spoon about a tablespoon of batter into each madeleine mold, filling about ¾ full. Bake for 10-12 minutes, or until the edges are golden and the tops spring back when touched.
- Cool and Serve: Let the madeleines cool in the pan for a few minutes before transferring them to a wire rack. Dust with powdered sugar if desired.
Notes
- Chilling the batter helps develop the signature hump on the back of the madeleines.
- Do not overmix the batter after adding the dry ingredients to keep the texture light.
- Fresh strawberries can add moisture, so dice them finely to prevent soggy madeleines.
- Store in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
